Moncharm has chosen Methode ancestrale as it is probably the first sparkling made in France in 1531 where we found written records in Abbaye of St Hilaire. This wine is naturally made; the hand-picked grapes are partially fermented in tank before being bottled with the remaining sugar and yeast. The wine is stored this way until spring where the phenomenal and spontaneous second fermentation takes place by the influence of the moon.
